Eating schnitzel in our home is a staple. So when I was asked to review Lundberg Grounded Snacks Red Rice & Quinoa Tortilla Chips, I knew I wanted to use it as my breading on our favorite schnitzel recipe.
To decide on our favorite, we sampled all the flavors one afternoon.
Our favorite flavors were Ancho Chile (smoky and mildly spicy with a bit of sweetness) and Aged White Cheddar (creamy white cheddar with a hint of garlic). Hubby came home and said he liked Pink Himalayan Salt (lightly salted to highlight the subtle nutty grain flavors). I stuck with hubby’s favorite and followed my schnitzel recipe. 
I put half a bag of Lundberg’s Grounded Snacks Red Rice & Quinoa Tortilla Chips in a bag and mashed it with a bottle of wine. 
I coated both sides of the chicken and cooked it for 4 minutes.
I flipped it over and cooked it for another 3 minutes.
My plan worked! My schnitzel recipe was even better with this new and improved breading technique.
