Letter Cake

I’ve seen the Letter Cake trend all over Instagram recently so for hubby’s 40th birthday I decided it was time to try it out.

It was lot’s of fun and super tasty, but yikes it was a lot of work. Here’s what the kids and I did.

Dough Ingredients

2 cups all-purpose flour

10 tbsp cold butter cold, cut into pieces

3 tbsp powdered sugar

1 tablespoon white sugar

pinch of salt

1 large egg

Cream Ingredients

16 oz block cream cheese, softened

3 tbsp powdered sugar

1 tsp vanilla

  1. Add all the ingredients (without the egg) to the food processor bowl. Pulse 2-3 times until the butter pieces are the size of large pieces.
  2. Add the cold egg and pulse until the dough begins to come together.
  3. Transfer the dough pieces onto a work surface, and gather them with your hands, forming a dough ball.
  4. Flatten the dough, wrap in plastic and put in the fridge for 1 hour.
  5. Take the dough from the fridge, divide in half, roll out the dough evenly (to ensure it browns evenly) onto parchment paper.
  6. Place the printed template on top of the dough and cut out the pattern. repeat with 2nd half and scraps.
  7. Preheat the oven to 350 degrees and bake for 15 minutes.
  8. Cool completely before decorating.
  9. Fill cream in a piping bag with a round tip (I used a round 11 mm).
  10. Prepare a tray on which the tart will remain.
  11. Place first layer of the cake on the tray. Piped cream should have lot’s of height from all the sides.
  12. Carefully place the second floor of the tart on top of the cream.
  13. Pipe two or three rows of cream on the second floor of the tart.
  14. Decorate as desired – I put yellow and green gummy flowers, macrons, UnReal chocolate gems, UnReal almonds chocolate gems, fresh lemon and lime slices.
  15. Put the prepared tart into the fridge until it’s ready to be served.
  16. Enjoy!
