Blender Cheesecake

We just celebrated the Jewish holiday, Shavout. As tradition goes it’s customary to eat dairy foods on Shavout. We eat dairy foods to symbolize the “land flowing with milk and honey”.

We eat borekas (recipe can be found here) and cheesecake. My friend once made this cheesecake that tasted amazing! It wasn’t too dense, or too sweet, it was just right.

Ingredients

9 inch graham cracker crust

16 oz cottage cheese

3 eggs

½ cup sugar

1 tsp vanilla

1 tbsp lemon juice

2 tbsp flour

Optional: chocolate chips, jelly

Directions

Blend all ingredients.

Pour into piecrust.

Bake @ 350 for 45 minutes or until set. Thanks to my little sous chefs for the help!

  1. Optional: Boil apricot jelly and pour over sliced fruit to set.
