Show & Tell Tuesday – Favorite Recipes

Anytime I cook something yummy or come across a great recipe I try adding it to the blog.

Mushroom Chicken

I love simple and yummy weeknight dinners. So after I made this I knew I had to share it with you guys.

I served it with rice pilaf. The kids, hubby and I all really loved it.

Ingredients
  1. 1 1/2 pounds chicken cutlets
  2. 1/4 cup all-purpose flour
  3. Salt and pepper
  4. 1 pound mushrooms, trimmed and sliced
  5. 1/4 cup dry white wine (use water if wine is not available)
  6. 1/4 cup chicken broth
  7. 1/4 cup chopped fresh parsley
Instructions
  1. In a large skillet, heat oil and 1 tablespoon butter over medium-high.
  2. Place flour, salt and pepper in a shallow dish.
  3. Coat chicken and cook in batches until light brown, about 3 minutes per side.
  4. Transfer to a plate.
  5. Reduce heat to medium, add mushrooms and 2 tablespoons oil. Cook until softened, 6 minutes.
  6. Add wine and broth.
  7. Cook, stirring, until reduced by half, 3 minutes.
  8. Season with salt and pepper.
  9. Return chicken to pan, top with parsley.
  10. Simmer for 5 minutes.

Farm Rich

Happy Super Bowl day!!

I don’t know much about football, but I love hanging out with friends AND eating. So when I get invited to Super Bowl party (or any party), I’m there!

To prep for the big day I got to test a few Farm Rich snacks.Our favorite Farm Rich Snack was the Mozzarella Bites.

Mozzarella Bites are crafted with authentic pizza crust and 100% real mozzarella cheese. Plus, they’re a great source of calcium and protein, and are microwaveable.

These soft little pillow cheese bites were amazing! My kiddos loved it too!

To kick it up a notch I made this cheesy snack even cheesier with a dip to go with it.All you need is a jar of your favorite pasta sauce and 1/2 a block of cream cheese. Microwave for 2 minutes and stir.Mmmm cheesy goodness!

Curry Mango Chicken

I love my crock pot! In fact I use it several times a week.

We also love Indian food, but going out is not always easy. The other day I made our favorite Indian dish in the crock pot.

Here is what you need.

Ingredients
  1. 1.5 lb skinless chicken breast
  2. 12 oz frozen mango chunks
  3. Trader Joe's Thai Yellow Curry Sauce
Instructions
  1. Put chicken, sauce and mango in crock pot.
  2. Cook on high for 4 hours or low for 6 hours.
Notes
  1. Shred before serving.

Borekas

One of my favorite recipes my mom makes is a delicious dish called borekas. img_0139

Borekas is a thin, flaky dough filled with things like cheese, potatoes, mushrooms or meat.

It’s absolutely delicious!

It’s the perfect mixture of crunch and cheese!

It’s yummy, easy and fun make. So I thought I’d share the recipe here with you.img_2508

Step 1: Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.img_2519

Step 2: Unfold sheets and cut into squares  img_2516 img_2517

Step 4: Place 1 teaspoon of mixture in each square.img_2520

Step 5: Fold squares into triangles. Pinch sides to seal. You can crimp the sides with a fork if it’s easier.

Step 6: Place borekas on a lightly sprayed baking sheet.img_8721   Step 7: Brush a light layer of egg wash on each triangle.

Step 8: Bake for 30 minutes or until golden brown. IMG_8724This can be served as an appetizer at a party, breakfast or as a light dinner with a side salad.IMG_8727Enjoy!

  1. 2 sheets puff pastry
  2. 2 eggs
  3. 1 cup shredded cheese
  4. 1/2 cup crumbled feta
  5. 1/3 cup ricotta cheese
  6. Salt and pepper to taste
  7. nonstick spray oil
Instructions
  1. Preheat oven to 350.
  2. Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.
  3. Unfold sheets and cut into squares.
  4. Place 1 tsp of each square.
  5. Fold squares into triangles. Pinch sides to seal.
  6. Place borekas on a lightly sprayed baking sheet.
  7. Mix egg yolk and 2 tsp of water in a bowl.
  8. Brush a light layer of egg wash on each triangle.
  9. Bake for 30 minutes or until golden brown.

Pasta and Meatballs

One of our favorite family meals is Pasta and Meatballs. Ever since Sarah was little she would ask for a (and finish her plate) pasta and meatballs. The “secret” to this recipe is… oatmeal!IMG_1498

Step 1: Make sauce or place a jar of sauce in a saucepan.

Step 2: Combine ground beef, oats and egg.IMG_2583

Step 3: Roll meat into small balls (they cook quicker). Place in sauce pan.IMG_1490Step 4: Bring to a boil.IMG_2592Step 5: Mix gently (to avoid breaking the meatballs), cover and let simmer for 20 minutes.

  2. 1/2 cup old fashioned oats
  3. Noodles
  4. 1 tbsp olive oil
  5. 1 medium yellow onion, diced
  6. 2 garlic cloves, finely chopped
  7. 30 oz can crushed tomato sauce
  8. 1/2 tsp salt
Instructions
  1. Make sauce.
  2. Combine ground beef, oats and egg.
  3. Roll meat into small balls (they cook quicker). Place in sauce pan.
  4. Bring to a boil.
  5. Mix gently (to avoid breaking the meatballs), cover and let simmer for 20 minutes.
  6. Cook noodles according to package.
  7. Plate and enjoy.
Notes
  1. Tip: I like to use gloves when working with raw meat.

Homemade Granola Bars

As a Pinterest lover, I’m always looking for new ways to make delicious treats for my family. Lately I’ve been pinning recipes for homemade granola bars. After some research and trial and error I’ve come up with a yummy recipe.

IMG_5079Here is what you will need:

IMG_5055In a large bowl, combine your oats, cereal, and flax. Stir with a large spoon until well combined. Set aside.

Place sugar, honey, oil, and salt in a sauce pan over medium heat. Bring it to a boil. Stirring the whole time, boil for exactly 1 minute so mixture combines and sugars dissolve.

Take pot off the heat and add in the peanut butter and vanilla. Stir until smooth.

Pour mixture over your dry mixture. Stir until well combined.

IMG_5056Let mixture sit for about 5-8 minutes.

Meanwhile, place a large sheet of parchment paper on a cookie sheet.

IMG_5057Pour mixture onto cookie sheet. Press with a second cookie sheet so it is flat. IMG_5063Then immediately spread your chocolate chips on the top and press again.IMG_5058Once the bars have cooled completely, slide parchment paper onto your counter.

Homemade Granola Bars

Ingredients
  1. 1/2 cup brown sugar
  2. 1 1/2 cup honey
  3. 1/3 cup olive oil
  4. 1/4 tsp fine sea salt
  5. 1 cup of your favorite peanut butter or almond butter
  6. 2 tsp vanilla extract
  7. 4 cup crisped rice cereal
  8. 2 2/3 cup old fashioned oats
  9. 2/3 cup ground flax seed
  10. 1/2 – 1 cup mini chocolate chips
  11. Cookie sheet
  12. Parchment paper
  13. Knife
Instructions

  1. To Freeze: Wrap each bar in plastic wrap. Place in a freezer safe zip lock bag and freeze. In the morning, I pull out a bar and put it in my children's lunches. By lunch hour they have thawed, becoming soft and chewy again.
