After my Whole30 cycle I’m on a mission to only eat food that makes me feel good. However there are times when you just want to snack. Luckily  after some research I found MadeGood Granola Bars. They’re made from whole grains, are low in sugar, and have a taste that my family loves! MadeGood Granola Bars and Minis come in 5 delicious flavors: Chocolate Chip, Mixed Berry, Chocolate Banana, Apple Cinnamon, and Strawberry. My favorite flavor is the mixed berry.MadeGood Granola Bars and Minis are organic, school safe, and contain the nutrients found in one serving of vegetables. Lundberg Grounded Snacks

Eating schnitzel in our home is a staple. So when I was asked to review Lundberg Grounded Snacks Red Rice & Quinoa Tortilla Chips, I knew I wanted to use it as my breading on our favorite schnitzel recipe.

To decide on our favorite, we sampled all the flavors one afternoon.

Our favorite flavors were Ancho Chile (smoky and mildly spicy with a bit of sweetness) and Aged White Cheddar (creamy white cheddar with a hint of garlic). Hubby came home and said he liked Pink Himalayan Salt (lightly salted to highlight the subtle nutty grain flavors). I stuck with hubby’s favorite and followed my schnitzel recipe. I put half a bag of Lundberg’s Grounded Snacks Red Rice & Quinoa Tortilla Chips in a bag and mashed it with a bottle of wine. I coated both sides of the chicken and cooked it for 4 minutes.I flipped it over and cooked it for another 3 minutes.My plan worked! My schnitzel recipe was even better with this new and improved breading technique.

I normally make my own tomato sauce, but when I heard Ragu was coming out with a Thick & Hearty sauce I was excited to try it.

Balsamic Garlic Chicken

  1. 1½ pounds boneless chicken breasts, sliced into strips
  2. salt and pepper to season chicken
  3. 2 tbsp olive oil
  4. 8 cloves garlic, finely chopped
  5. 1 pound mushrooms, sliced
  6. ⅓ cup balsamic vinegar
  7. ¾ cup chicken broth
  1. Season chicken with salt and pepper on both sides.
  2. Heat 2 tbsp of olive oil in a large 10-inch skillet over medium high heat. When skillet and oil are hot, place the chicken in the skillet evenly.
  3. Cook the chicken on one side for 5 minutes until browned, flip the chicken and cook for 3 more minutes.
  4. Set chicken aside.
  5. Add the garlic and the mushrooms into the pan and stir to combine. Cook this for 5 minutes until the mushrooms begin to soften.
  6. Add in the vinegar and broth.
  7. Cover and cook for 10 minutes.
  8. Uncover the skillet and cook for an additional 5-7 minutes to thicken the sauce slightly.
