Eating schnitzel in our home is a staple. So when I was asked to review Lundberg Grounded Snacks Red Rice & Quinoa Tortilla Chips, I knew I wanted to use it as my breading on our favorite schnitzel recipe.
To decide on our favorite, we sampled all the flavors one afternoon.
Our favorite flavors were Ancho Chile (smoky and mildly spicy with a bit of sweetness) and Aged White Cheddar (creamy white cheddar with a hint of garlic). Hubby came home and said he liked Pink Himalayan Salt (lightly salted to highlight the subtle nutty grain flavors). I stuck with hubby’s favorite and followed my schnitzel recipe. I coated both sides of the chicken and cooked it for 4 minutes.I flipped it over and cooked it for another 3 minutes.My plan worked! The first sauce we tried was the Thick & Hearty Mushroom.HI was going to just add it to past, but hubby was in the mood for meat sauce.
Step 1: Brown meat until very little pink.Step 2: Boil pasta according to directions on box.Step 3: Drain pasta AND meat.
Step 4: Add Ragu Thick & Creamy Mushroom sauce to meat. Step 5: Bring to boil and then simmer for 10 minutes. Tip: Don’t fight with the sauce at the bottom of the jar. Turn the jar over and wait for all the sauce to drip down towards the lid. When ready pour the sauce into the pan. And just like that we had a delicious, thick and hearty sauce that the whole family loved!Including this little guy.

Balsamic Garlic Chicken
- 1½ pounds boneless chicken breasts, sliced into strips
- salt and pepper to season chicken
- 2 tbsp olive oil
- 8 cloves garlic, finely chopped
- 1 pound mushrooms, sliced
- ⅓ cup balsamic vinegar
- ¾ cup chicken broth
- Season chicken with salt and pepper on both sides.
- Heat 2 tbsp of olive oil in a large 10-inch skillet over medium high heat. When skillet and oil are hot, place the chicken in the skillet evenly.
- Cook the chicken on one side for 5 minutes until browned, flip the chicken and cook for 3 more minutes.
- Set chicken aside.
- Add the garlic and the mushrooms into the pan and stir to combine. Cook this for 5 minutes until the mushrooms begin to soften.
- Add in the vinegar and broth.
- Cover and cook for 10 minutes.
- Uncover the skillet and cook for an additional 5-7 minutes to thicken the sauce slightly.
