St. Patrick’s Day {2016}

We are not Irish, so we don’t “celebrate” St. Patrick’s Day, but we do like to get festive.

We started our morning off with errands and a visit to the local doughnut shop for a special green doughnut.IMG_5466

It was fun hanging out with our friends. However it was busy and at times chaotic. I go to these type of festive events for my kids. They are simple memories that Sarah will talk about for weeks after.

I knew it would be a busy day, so I prepped the crock pot earlier in the day. This way when we got home we had something warm and hearty to eat after our sugary day.

For dinner, I made beef stew with carrots and potatoes. I also made roasted cabbage as a side.IMG_5511The recipe was yummy I thought I’d share it.

Crock Pot Beef Stew with Carrots and Potatoes

Ingredients
  1. 2 pounds beef stew meat, cut into 1 inch cubes
  2. 1/4 cup all-purpose flour
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon ground black pepper
  5. 15 oz can Guinness beer (optional)
  6. 1 clove garlic, minced
  7. 1 bay leaf
  8. 1 teaspoon paprika
  9. 1 teaspoon Worcestershire sauce
  10. 1 1/2 cups beef broth
  11. 3 potatoes, diced
  12. 4 carrots, sliced
Instructions
  1. Place meat in slow cooker.
  2. In a small bowl mix together the flour, salt, and pepper.
  3. Pour over meat, and stir to coat meat with flour mixture.
  4. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, broth, potatoes, and carrots.
  5. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
Notes
  1. Roasted Cabbage: Cut a head of cabbage into thick slices. Set on lightly sprayed baking sheet. Season with olive oil, garlic, salt and pepper. Bake at 425 for 25 minutes. Turn half way for even crispiness.
