Passover {2013}

We recently celebrated eight days of Pesach (Hebrew for “Passover”). Most people know this holiday as the Matzah holiday. Since one of the days fell on the day Sarah attends school, I made sure to sign up to bring snack that week (we are all responsible for bringing snack once per semester). That way I knew that Sarah and I would be eating “Kosher for Passover” food only.

I decided to bake a recipe my hubby shared with me the week prior. This recipe can easily be changed by switching out the cake meal for flour.

Apple Cake w/ Crumb Topping

3 eggs

¾ cup sugar

1/3 cup oil

¾ cup cake meal

5 apples, peeled an sliced

½ cup sugar

½ cup cake meal

4 tbsp of butter/margarine

  1. Set oven at 350.
  2. Spray 8’’ pan with oil
  3. Beat the eggs with sugar and oil until the mixture is light colored.
  4. Add the cake meal and mix well.
  5. Pour half of the mixture into a greased pan. 8″
  6. Put half of the apples over the batter.
  7. Pour the rest of the batter over the apples and cover with the remaining apples.
  8. Mix the topping in a small bowl and sprinkle over the cake.
  9. Bake in preheated 350-degree oven for about 40 minutes.

I decided to bake this cake the night before class and I was really tired. So instead of the two layer cake it suggested above, I opted to make only one layer. I brought it to class the next day and explained a little bit about why I brought a Pesach cake. Before snack time ended, I quickly went back to my baking dish to snap a picture. To my surprise, people went back for seconds so all I got was a picture of the last piece! I also brought a box of Matzah for the class to taste.

P.S. It’s only been three months and we’ve already celebrated 3 Jewish Holidays. Add that to the non-Jewish holidays we celebrate plus birthdays and anniversaries and, wow, that’s a lot of celebrations!
