Meatloaf Muffins

I love food and I love trying different flavors. However, Hubby and I have different palates. He likes sweet dishes and I prefer savory ones. He prefers eating his same favorite dishes and I like to search for new recipes and try new ingredients. Here is one my family’s (including my picky toddler’s) favorite meals.

Meatloaf Muffins
1 onion, cut into chunks
2 ribs celery, cut into pieces
1 bell pepper (any color), cut into pieces
1 lb ground beef
1 egg
1 cup of oatmeal
1 cup barbecue sauce
1/2 cup tomato salsa
1 tbsp Worcestershire sauce

Pulse veggies in food processor until fine. Combine beef, veggies and the rest of the ingredients in a bowl. Spray a 12-muffin tin with oil. Use an ice cream scoop to fill the tin with the meat mixture. Bake about 20 minutes. Cut open one muffin to test that the middle is cooked through and enjoy!

Makes 12 “muffins”

I’m a vegetarian, Jason can’t eat certain things and the kids are picky… Sometimes I end up making 4 different meals for dinner! Thanks for the recipe!
