Egg Muffins

I’m not a morning person. I also don’t always have time to make a healthy breakfast.

However, now that I’m nursing a hungry boy (alllll the time) I wake up really hungry.

Introducing my favorite breakfast…Egg Muffins.IMG_8068

It’s a really simple way to make a healthy breakfast that lasts a few days.

The best part are the endless options!

Here is what I did.

Crack eggs into a bowl.IMG_8051

Chop veggies. This time I chose tomatoes, mushrooms, and peppers. IMG_8054

Tip: Cut your pepper like this. IMG_8055 IMG_8056

Pour egg mixture into generously sprayed muffin tin.IMG_8057Place veggies in muffin tins. IMG_8058Sprinkle cheese on each muffin tin. IMG_8059Bake at 350 for 15-20 minutes. IMG_8060Let cool and place in air tight container.

Ingredients
  1. 8 eggs
  2. 1/4 cup of shredded cheese
  3. 1 cup of chopped veggies
  4. Salt
  5. Pepper
Instructions
  1. Crack eggs into a bowl.
  2. Whisk eggs.
  3. Add salt and pepper.
  4. Chop veggies.
  5. Pour egg mixture into generously sprayed muffin tin.
  6. Place veggies in muffin tins.
  7. Sprinkle cheese on each muffin tin.
  8. Bake at 350 for 15-20 minutes.
  9. Let cool and place in air tight container.
