Spaghetti with Chickpeas

Spaghetti with Chickpeas

Ingredients
  1. 1 lb spaghetti
  2. 2 cloves garlic, minced
  3. 28 oz can crushed tomatoes
  4. 30 oz chickpeas, drained
  5. 2 tbsp lemon juice
  6. 1 tsp salt
  7. 1 tsp pepper
  8. Grated Parmesan
Instructions
  1. Cook pasta according to package directions.
  2. Drain, reserving 1/2 cup of the cooking water.
  3. In a large pot heat 1/2 cup olive oil and garlic. Cook 1 to 2 minutes.
  4. Stir in tomatoes, chickpeas and the reserved pasta water.
  5. Bring to a boil, then reduce heat and simmer until the mixture thickens (about 10 minutes).
  6. Add lemon juice, salt and pepper. Mix well.
  7. Add the cooked pasta, toss to coat.
  8. Serve pasta with grated Parmesan.

Cookies & Creme in a Mug

Last month, while my sister was here visiting us we were craving cookies one night.

Instead of going out for dessert or baking an obscene amount of cookies, I told her about cookies in a mug.

I have seen several recipes on Pinterest on how to make a cookie in a mug and this was a perfect time to try it out! We found one we liked and started “baking”.

It was so easy and delicious!

After Sarah and I bought a jar of Cookies and Creme Cookie Butter, it had me thinking about all the other combinations I could make.

Cookies & Creme in a Mug

Ingredients
  1. 4 tablespoons flour
  2. 4 tablespoons sugar
  3. 1 egg
  4. 3 tablespoons cocoa powder
  5. 3 tablespoons Cookies & creme cookie spread
  6. 3 tablespoons milk
  7. 3 tablespoons vegetable oil
Instructions
  1. Combine all ingredients in a large coffee mug.
  2. Whisk well with a fork until smooth.
  3. Microwave on high for 1½– 3 minutes. (Time depends on microwave; mine took 1½ minutes.)

Egg Muffins

I’m not a morning person. I also don’t always have time to make a healthy breakfast.

However, now that I’m nursing a hungry boy (alllll the time) I wake up really hungry.

Introducing my favorite breakfast…Egg Muffins.IMG_8068

It’s a really simple way to make a healthy breakfast that lasts a few days.

The best part are the endless options!

Here is what I did.

Crack eggs into a bowl.IMG_8051

Chop veggies. This time I chose tomatoes, mushrooms, and peppers. IMG_8054

Tip: Cut your pepper like this. IMG_8055 IMG_8056

Pour egg mixture into generously sprayed muffin tin.IMG_8057Place veggies in muffin tins. IMG_8058Sprinkle cheese on each muffin tin. IMG_8059Bake at 350 for 15-20 minutes. IMG_8060Let cool and place in air tight container.

  3. 1 cup of chopped veggies
  4. Salt
  5. Pepper
Instructions
  1. Crack eggs into a bowl.
  2. Whisk eggs.
  3. Add salt and pepper.
  4. Chop veggies.
  5. Pour egg mixture into generously sprayed muffin tin.
  6. Place veggies in muffin tins.
  7. Sprinkle cheese on each muffin tin.
  8. Bake at 350 for 15-20 minutes.
  9. Let cool and place in air tight container.

Pasta and Meatballs

One of our favorite family meals is Pasta and Meatballs. Ever since Sarah was little she would ask for a (and finish her plate) pasta and meatballs. The “secret” to this recipe is… oatmeal!IMG_1498

Step 1: Make sauce or place a jar of sauce in a saucepan.

Step 2: Combine ground beef, oats and egg.IMG_2583

Step 3: Roll meat into small balls (they cook quicker). Place in sauce pan.IMG_1490Step 4: Bring to a boil.IMG_2592Step 5: Mix gently (to avoid breaking the meatballs), cover and let simmer for 20 minutes.

  2. 1/2 cup old fashioned oats
  3. Noodles
  4. 1 tbsp olive oil
  5. 1 medium yellow onion, diced
  6. 2 garlic cloves, finely chopped
  7. 30 oz can crushed tomato sauce
  8. 1/2 tsp salt
Instructions
  1. Make sauce.
  2. Combine ground beef, oats and egg.
  3. Roll meat into small balls (they cook quicker). Place in sauce pan.
  4. Bring to a boil.
  5. Mix gently (to avoid breaking the meatballs), cover and let simmer for 20 minutes.
  6. Cook noodles according to package.
  7. Plate and enjoy.
Notes
  1. Tip: I like to use gloves when working with raw meat.

Meal Planning Monday #2

Didn’t get a chance to get this out on Monday, but figured a recipe is recipe no matter when you read it.

-Monday-

Brought a Meal Train for my friend, Nicole and her family. After the visit I had a committee meeting to attend so everyone just ate leftovers.

-Tuesday-

I had another Meal Train on this day. Since my friend, Chana keeps strict kosher I just bought her a pizza and a salad from a local Kosher restaurant. I bought a pizza for us that night too.20110918-171251-DS-JoesSM-Slice-MainThey have the yummiest and greasiest pizza in the area. We love it!

-Thursday-

Salmon and Carrot FriesIMG_0994 I brushed the fish with a simple sauce of Dijon and soy sauce. I cut the carrots into sticks, sprinkled them with oil, salt and pepper and roasted them at 425 for 20 minutes.
