Honey Garlic Crock Pot Chicken

Ingredients
  1. 4 to 6 boneless, skinless chicken thighs
  2. 4 garlic cloves, minced
  3. ⅓ cup honey
  4. ½ cup ketchup
  5. ½ cup low sodium soy sauce
  6. ½ teaspoon dried oregano
  7. 2 tablespoons dried parsley
Instructions
  1. Combine garlic, honey, ketchup, soy sauce, oregano, and parsley in the crock pot.

Pineapple Dream Smoothie

We LOVE smoothies around here!

It’s easy to make and a great way to include veggies for picky eaters.

We took a break after the summer, but found ourselves making them again with all this warm So Cal weather.

img_5428There is nothing more refreshing then an ice cold creamy smoothie on a hot afternoon while the kids play outside.imagesindex

I call this recipe Pineapple Dream because if you close your eyes for a quick second, you feel like you are in a tropical vacation somewhere.

1 frozen or fresh banana

1/2 cup frozen pineapple

2 big handfuls of spinach
1/2 cup milk of your choice (see my almond milk recipe here)
1/2 cup water

1/4 cup ice

1/2 cup greek yogurt (when it’s in my fridge)

Blend until combined.

Happy summer, I mean fall!

  1. 1 frozen or fresh banana (I usually have a few in the freezer)
  2. 1/2 cup frozen pineapple
  3. 1/2 cup greek yogurt
  4. 1/2 cup milk of your choice
  5. 1/2 cup water
  6. 1/4 cup ice
  7. 2 big handfuls of spinach
Instructions
  1. Blend until combined.
Notes
  1. Hint: peel and cut banana in half before freezing

Borekas

One of my favorite recipes my mom makes is a delicious dish called borekas. img_0139

Borekas is a thin, flaky dough filled with things like cheese, potatoes, mushrooms or meat.

It’s absolutely delicious!

It’s the perfect mixture of crunch and cheese!

It’s yummy, easy and fun make. So I thought I’d share the recipe here with you.img_2508

Step 1: Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.img_2519

Step 2: Unfold sheets and cut into squares  img_2516 img_2517

Step 4: Place 1 teaspoon of mixture in each square.img_2520

Step 5: Fold squares into triangles. Pinch sides to seal. You can crimp the sides with a fork if it’s easier.

Step 6: Place borekas on a lightly sprayed baking sheet.img_8721   Step 7: Brush a light layer of egg wash on each triangle.

Step 8: Bake for 30 minutes or until golden brown. IMG_8724This can be served as an appetizer at a party, breakfast or as a light dinner with a side salad.IMG_8727Enjoy!

  1. 2 sheets puff pastry
  2. 2 eggs
  3. 1 cup shredded cheese
  4. 1/2 cup crumbled feta
  5. 1/3 cup ricotta cheese
  6. Salt and pepper to taste
  7. nonstick spray oil
Instructions
  1. Preheat oven to 350.
  2. Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.
  3. Unfold sheets and cut into squares.
  4. Place 1 tsp of each square.
  5. Fold squares into triangles. Pinch sides to seal.
  6. Place borekas on a lightly sprayed baking sheet.
  7. Mix egg yolk and 2 tsp of water in a bowl.
  8. Brush a light layer of egg wash on each triangle.
  9. Bake for 30 minutes or until golden brown.

Frontera Taco Skillet Sauce

Our family loves Mexican food! We love it so much that we eat it at least once a week.

When I heard about Frontera Taco Skillet Sauce helping me cut down my cooking time, I was really eager to try it.Frontera Taco Sauce

I got all my ingredients together and began to cook.img_7274Step 1: Brown chicken on both sides. Set aside.

Step 2: Add onion and peppers and cook until soft.

Step 3: Add tomato and sliced chicken to pan.

Step 4: Pour Frontera Taco Skillet Sauce on mixture. Cover and set on low/sim for 8-10 minutes. IMG_7290 IMG_7291

Almond Milk

IMG_0724 I am half way through my whole30 journey and I’ve noticed how much almond milk I’m consuming. If it’s not in my coffee then it’s in our afternoon smoothies.IMG_0812

So one day I thought, “hey I should make to make my own almond milk!”

So I did!

It’s very simple and tastes really yummy!

Step 1: Blend a bag of raw almonds with 3.5 cups of water.IMG_0934Step 2: Strain mixture into a nut bag or use a cheese cloth like I did. (I think the nut bag is a better way to go next time. It was a hot mess at one point.)IMG_0938Step 3: Use your hands and squeeze out the liquid.  IMG_0939IMG_0940Mmmmm! IMG_0941Step 4: Put milk back into the blender and add 1 tsp of cinnamon and 1 tsp of vanilla.  IMG_0943Step 5: Blend until smooth. IMG_0944IMG_0945It was so yummy and creamy. Mmmm I could drink it by the gallon!

I highly recommended making your own.

Crock Pot Chicken Noodle Soup

I love soup weather and I love chicken noodle soup, but with my busy schedule and not a lot of times to sit over a pot of soup I’ve been looking for a yummy and easy chicken noodle soup.

After some trial and error I have found one that not only taste amazing it’s also easy to make.

Crock Pot Chicken Noodle Soup

Ingredients
  1. 1 1/2 lbs boneless skinless chicken breasts
  2. 5 medium carrots, peeled and chopped
  3. 1 medium yellow onion, chopped
  4. 4 stalks celery, chopped
  5. 4 cloves garlic, minced
  6. 3 Tbsp extra virgin olive oil
  7. 6 cups/45oz chicken broth
  8. 1 cup water
  9. 3/4 tsp dried thyme
  10. 2 bay leaves
  11. Salt and freshly ground black pepper, to taste
  12. 2 cups uncooked wide egg noodles
  13. 1/4 cup chopped fresh parsley
  14. 1 Tbsp fresh lemon juice
Instructions
  1. Add chicken, carrots, onion, celery, and garlic.
  2. Drizzle olive oil over top then add in chicken broth, water, thyme, bay leaves and season with salt and pepper to taste.
  3. Cover and cook on low heat 6 - 7 hours or on high heat 4 hours.
  4. Remove cooked chicken and pull apart of dice into bite size pieces.
  5. Meanwhile, add egg noodles and parsley to slow cooker. Cook for 10 minutes (or until noodles are tender).
  6. Stir in lemon juice and toss in chicken.
Notes
  1. I buy prediced carrots, celery and onion mix from Trader Joe's. It saves me time and doesn't waste leftover food.

Applesauce Muffins

Both Sarah and I love to bake. So before a play date the other day we made a batch of Applesauce Muffins. I tweaked it a bit and found a recipe we both love.

Ingredients
  1. 2 cups flour
  2. 3⁄4 cup sugar
  3. 2 teaspoons baking powder
  4. 1 teaspoon cinnamon
  5. 1⁄4 teaspoon salt
  6. 1 large egg, beaten
  7. 1 cup unsweetened applesauce
  8. 1⁄2 cup butter, melted
Instructions
  1. Heat oven to 375 degrees.
  2. Spray muffin tins with nonstick spray.
  3. Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  4. Mix in beaten eggs, applesauce and melted butter.
  5. Evenly scoop mixture into muffin pans.
  6. Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.
