Fettuccine Alfredo

I love food and I love pasta. I eat healthy most of the the time, but sometimes I just want a big bowl of pasta. So when I saw a recipe for an easy Fettuccine Alfredo I knew I had to make it. After I tweaked the recipe a bit I decided it needed to be shared.
Ingredients
fettuccine noddles
1/2 cup butter
3/4 cups heavy cream
salt and pepper
3 garlic cubes (I like using these frozen cubes from Trader Joe’s)
1/2 cup grated Parmesan cheese
1 tsp cornstarch
mushrooms
1 tsp parsley
 
Instructions
Saute package of mushrooms in a saucepan.
Add 1 cube of garlic.
Season with salt.
Set aside.
Cook pasta according to package.
Melt the butter in a saucepan.
Add the cream and simmer.
Add salt, pepper and garlic.
Add cornstarch and mix well.
Stir in cheese over medium heat until combined.
Add the pasta to the sauce.
Top with sauteed mushrooms.
Enjoy!

As a family who eats fish at least once a week, we were so excited when Orca Bay Seafoods wanted my family to try their Keta Salmon.
I decided to use the recipe on the back of the package and made Keta Salmon with Stika Spice Rub 

The vacuum sealed bags are perfect for those who want only a few pieces at a time.Mixing the rub. Season fillets with rub mixture and place them in pan. Cook fish for 4-6 minutes or until salmon just flakes with fork.  I served the Keta Salmon with roasted green beans and a side of pilaf for dinner.Dinner was amazing! We all loved the the delicious stika spice rub.

Keta Salmon with Stika Spice Rub Recipe

1 thawed package Orca Bay Seafood Fillets

1 tbsp olive oil

2 tbsp brown sugar

1 tbsp paprika

2 tsp kosher salt

1/2 tsp black pepper

1/2 tsp thyme

1/4 tsp coriander

1/4 tsp cumin

1/4 tsp cayenne pepper (optional)

Directions

Coat a non-stick pan with olive oil and heat over medium high heat.

Season fillets with rub mixture and place them in pan.

Sear each side for 1-2 minutes.

Cook fish for 4-6 minutes or until salmon just flakes with fork.

Curry Mango Chicken

I love my crock pot! In fact I use it several times a week.

We also love Indian food, but going out is not always easy. The other day I made our favorite Indian dish in the crock pot.

  1. 1.5 lb skinless chicken breast
  2. 12 oz frozen mango chunks
  3. Trader Joe's Thai Yellow Curry Sauce
Instructions
  1. Put chicken, sauce and mango in crock pot.
  2. Cook on high for 4 hours or low for 6 hours.
Notes
  1. Shred before serving.

Eggplant Parmesan Bake

On our last Trader Joe’s shopping trip we sampled a delicious version of Eggplant Parmesan. It was so yummy and the recipe was so easy I knew I had to remake it for my family.

Ingredients

Step 6: Bake at 350 for 25-30 minutes.

  3. 12 oz qauttro formaggio
  4. Basil leaves (remove the stems)
Instructions
  1. Pour a thin layer of sauce.
  2. Add a layer of eggplant.
  3. Add a layer of basil.
  4. Sprinkle a layer of cheese.
  5. Repeat steps until you are out of eggplant.
  6. Bake at 350 for 25-30 minutes.

Tuscan Spaghetti Squash

Ingredients
  1. 1 large spaghetti squash
  2. Olive oil
  3. 1 jar of your favorite sauce (I used Bertolli Organic Five Cheese Sauce)
Instructions
  1. Preheat oven to 400.
  2. Halve squash lengthwise and deseed.
  3. Brush with olive oil and arrange cut side down on baking sheet.
  4. Bake for 45 min or until tender.
  5. Gently scrape squash with a fork.
  6. Top with your favorite sauce.

Cauldron Cupcakes

Ingredients

Box of chocolate cake mix (I like Duncan Hines)Cauldron Cupcakes

Box of vanilla or pistachio pudding

Green food coloring

Body part candies

Cupcake wrappers

Directions

Step 1: Bake cupcakes according to directions on the box, let cool.

Step 2: Cook pudding according to directions on box, let cool.

Step 3: Scoop out a small portion of the cupcake.

Step 4: Fill cupcake with pudding.

Step 5: Put a few candy pieces.
