One of my favorite recipes my mom makes is a delicious dish called borekas. img_0139

Borekas is a thin, flaky dough filled with things like cheese, potatoes, mushrooms or meat.

It’s absolutely delicious!

It’s the perfect mixture of crunch and cheese!

It’s yummy, easy and fun make. So I thought I’d share the recipe here with you.img_2508

Step 1: Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.img_2519

Step 2: Unfold sheets and cut into squares  img_2516 img_2517

Step 4: Place 1 teaspoon of mixture in each square.img_2520

Step 5: Fold squares into triangles. Pinch sides to seal. You can crimp the sides with a fork if it’s easier.

Step 6: Place borekas on a lightly sprayed baking sheet.img_8721   Step 7: Brush a light layer of egg wash on each triangle.

Step 8: Bake for 30 minutes or until golden brown. IMG_8724This can be served as an appetizer at a party, breakfast or as a light dinner with a side salad.IMG_8727Enjoy!

Ingredients
  1. 2 sheets puff pastry
  2. 2 eggs
  3. 1 cup shredded cheese
  4. 1/2 cup crumbled feta
  5. 1/3 cup ricotta cheese
  6. Salt and pepper to taste
  7. nonstick spray oil
Instructions
  1. Preheat oven to 350.
  2. Combine cheese, egg, salt and pepper in a mixing bowl. Set aside.
  3. Unfold sheets and cut into squares.
  4. Place 1 tsp of each square.
  5. Fold squares into triangles. Pinch sides to seal.
  6. Place borekas on a lightly sprayed baking sheet.
  7. Mix egg yolk and 2 tsp of water in a bowl.
  8. Brush a light layer of egg wash on each triangle.
  9. Bake for 30 minutes or until golden brown.
